Patriotic Berry Cookies
These delicious cookies are an explosion of berry flavor with hint of cinnamon. Perfect for every 4th of July celebration!
Ingredients
1 stick of softened room temperature butter
3/4 cups packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 3/4 cups of flour
1 3.5 0z instant vanilla pudding mix
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
1/2 cup chopped strawberries slightly heaped
1/2 cup blueberries slightly heaped
1 cup raspberries slightly heaped
Cream Cheese Frosting
4 tablespoons of softened butter
4 0z. softened cream cheese
1/2 teaspoon vanilla
2 cups powder sugar
I was surprised with how good they tasted! You never know if a new recipe will turn out how you imagined it.
Step 1.
In a large mixing bowl cream softened butter with an electric mixer for 30 sec.
Step 2.
Add 3/4 cups brown sugar and mix for 3min. until fluffy.
Step 3.
Mix in egg and vanilla until incorporated
Step 4.
In a small bowl whisk together flour, baking soda, pudding mix, salt, & cinnamon.
Step 5.
Add dry ingredients to butter sugar mixture until almost incorporated.
Step 6.
Drain almost all the juice from the berries and mix them into the dough with a spatula.
Step 7.
Place parchment on baking pan. I recommend using ice cream scoop, no bigger than a 1 in. to place the cookies on the pan. (I used a spoon to make mine, so it isn’t absolutely necessary) Make sure to leave plenty of room between cookies they spread quite a bit.
Step 8.
Bake at 350° for approximately 10- 15mins. until toothpick inserted comes out clean.
Step 9.
(Optional) These cookies are so good on their own, but you can also add cream cheese frosting with this great recipe. Cream butter & cream cheese together with a electric mixer. Add vanilla & powder sugar until it reaches a smooth consistency.
Step 10.
Add patriotic sprinkles for garnish if you would like & enjoy!
